This time I tried eggs as my main ingredient of quick meal over lunch. In Indian we call it as Anda bhurji (Scrambled Eggs) which is a free mix of colors, spice and flavors. It can be taken with bread or as a mixture for making Egg stuffed Sandwiches.
Eggs are high in Protein and as per some exact values one egg has exact 7 grams of high-quality protein. So here is my recipe:
Serving size: 2
- Eggs (3 Chicken Eggs)
- Onion (2)
- Tomato (2)
- Turmeric (1/8 teaspoon)
- Coriander powder (1/4 teaspoon)
- Cumin (1/2 teaspoon)
- Mustard or olive oil (2 teaspoon)
- Salt as per taste
Step 1: Start with chopping Onion and Tomato with square cuts. Break the eggs and put it in a bowl.
Step 2: Take a pan and add 2 tablespoon of Olive or Mustard oil. Once the oil is heated up, add half tablespoon of Cumin seed into it and fry till the seeds turns dark brown. Cumin seeds add rich Indian flavor to the cuisine.
Step 3: To the fried Cumin seeds add sliced onion and mix the content till the onions turn light brown.
Step 4: Now, add chopped tomatoes, 1/4 teaspoon of Coriander powder and salt to taste into the mixture. Toss all the contents of the pan for 2 minutes and cover the pan with lid for 5 minutes to soften the tomatoes in steam.
Step 5: Its time to add the main ingredient Eggs into the pan. Gently add the eggs and a pinch of turmeric for flavour into the mixture and stir all contents with eggs rigorously without creating a big egg lump. Rotate the mixture for 5 minutes on high flame till the moisture inside pan gets evaporated and mixture gets dried up.
Step 6: Once the mixture gets dried up put the lid over for a minute to absorb all flavour and spices inside scrambled egg.
Your scrambled egg recipe with Indian taste is ready to be served hot with bread or as a stuffing for Sandwich.
